Caracoles or snails. In Seville “caracoles” are the small snails and “cabrillas” are large snails. This plate is an ancient culinary and highly appreciated speciality of the roman cuisine. Nutritious and tasty, caracoles are served with the own broth bouillon with a lightly spiced point. It´s a must everywhere in Sevilla in springtime.
