The salmorejo is a cream served usually like the first plate (is like cold tomato soup); it is a traditional preparation of Cordoba, Andalusia. It is prepared by breadcrumb, garlic, olive oil, vinegar, salt, and tomatoes. It usually serves with little pieces of other food in its surface as: little slices of ham, fried breads, or with hard-boiled egg crumbs. Is served fresh & cold.

It possesses some similarities with the popular gazpacho; between the differences it is necessary to emphasize the abundant use of bread in its making that makes it more dense. On the other hand, the salmorejo uses only tomato and garlic, while the gazpacho is prepared by other vegetables as there are the cucumber, pepper and onion.
